Spotlight Katrina Cammack
Katrina grew up in Seattle, WA and is the 2nd of 5 children. Highlights of her life before college include lots of hiking and camping, living next to a zoo, being home-schooled, and traveling to Italy with her choir.
At BYU, Katrina majored in Political Science and met her husband, Devin. He had just moved into her ward and they had hung out in groups when a mutual friend asked them to go along on his blind date to lessen the potential awkwardness. Katrina didn't realize it was a date (their first date) until Devin tried to hold her hand several times during the movie. Things snowballed though and they were married 5 months later.
After college, they moved to Las Vegas, NV for a year before moving to Salt Lake for Devin's job. They built and moved into this neighborhood almost 2 years ago. They live on Thoroughbred, just a couple houses south of the church.
Before starting a family, Katrina worked for several years on political campaigns: local, state, and presidential. While she loved the excitement and fast pace of campaign life, Katrina is happy to be a stay at home mom to her 14 month old daughter, Cassidy.
In her free time, Katrina likes to cook, read, knit, and plan projects for her handy husband.

Spotlight Lori Thomas
Lori Thomas
Lori is the oldest
child of 4 siblings. They lived in Kearns Utah when she was born.
Later they moved to Sandy and then to Centerville. While in
Centerville her parents divorced and from then on, her mother and
siblings moved all over Southern Davis County, finally ending up in
Kaysville where she lived while attending Davis High School. When she
was 21, her mother remarried a pretty fabulous guy and his 2
daughters joined their family.
After graduating from Davis
High School she attended what was then Ricks College. After
graduating, she came home and started working to save money for her
mission. During that time she was set up on a blind date with her
husband. She secretly (or not so secretly) wanted to be set up with
the guy her friend had been set up with. But Clint called her again
and the other guy didn't, for which she is eternally grateful for. It
only took 1 more date for her to see how awesome he is. They dated
for three months before Lori served her mission in Nagoya Japan. He
was still around when she came home so 3 ½ months later, they were
married.
After marriage she finished
her degree in Elementary Education and went on to teach school for 6
years while they tried to get pregnant and have children. She taught
5th and 6th grade. It was a very good
experience and a great training ground for having children on their
own. Clint finished his plumbing licence and school and was a
licensed plumber running his own business until he retired from
plumbing in 2012. Now they do property management.
After much struggle,
fasting, prayer, and after 8 years of marriage they were blessed to
adopt a sweet baby boy who them brought home on Thanksgiving Day.
Lori was able to quit teaching and then 2 other children followed,
all of them adopted. Now, after many years, Lori feels so grateful to
have never born children of her own. She has 3 open adoption (meaning
they have contact witht he birth parents). She has found she has many
quality and talents that were best used working with these sweet
birthmothers. 2 of her birthmothers have met with the missionaries
and all of them have been blessed with happier and less dramatic
lives because of their choices to place their babies. She loves her
birthmoms almost as much as her babies and is eternally indebted to
them.
Lori and her family moved
here in July in 2013 from a different home by Barnes Park in
Kaysville. She loves this ward and feels like it has been such a
blessing to their family. The people here have been so accepting and
willing to appreciate the difference in families here. She loves that
their is more diversity in this ward. It helps to make a more loving
and less judgmental neighborhood. The Thomas family lives on the
corner of Thoroughbred Dr. And Mare Dr. In the summer they have a
pretty waterfall that runs down their front yard (just in cast you
need to find their house),
We are so glad to have them
in our ward.

Freezer Meals Class
Types
There are 4 basic types of freezer meals
1-crockpot- these are preassembled crock pot meals that you freeze uncooked and cook the day of in your crockpot
2-oven meals- these are preassembled non cooked freezer meals that you cook the day of in your oven
3-precooked meals- these you cook before you freeze. All you have to do is thaw and if needed reheat before serving.
4- meal components- these are not entire meals but components that you cook ahead of time and freeze to make meal prep faster
Supplies needed:
Containers to freeze your meals in: Ziploc bags work well for crockpot meals, tin oven containers work well for oven meals- that way your few casserole dishes are not unavailable. Some people will line their casserole dish with plastic wrap or foil, freeze in the dish and then once frozen pull out and wrap and store in the fridge. When ready to cook they pop it into the casserole dish. Tupperware is not recommended unless you will be filling it full, you want as little air as possible. For some items vacuum sealing works well also, usually you want to freeze the item first.
Tips;
-Plan ahead- figure out what recipes you want to do and buy all the ingredients at once. Set aside a morning or afternoon to assemble all at once. It makes it faster if you can cut all the veggies for all the meals at one time etc. Use an assembly line.
-Lay your bags flat to freeze. They store better in the freezer. Make sure also to get as much air out as possible
-Write your cooking instructions on your bag BEFORE you fill it. Trust me.
-the seasoning gets less intense in freezer meals. You may want to adjust accordingly.
- if you are freezing individual items (like muffins, taquitos etc) freeze first in a single layer on a cookie sheet and then put in bags or other containers after they are frozen
-for casseroles put a layer of plastic wrap on top and then foil. Be sure to remove the plastic wrap before cooking!
- you do not have to thaw before you cook but remember it will take longer to cook if you start from frozen!
- look at what your family normally eats- what can be frozen?

Recipes:
Here are a few recipes that my family likes:
Sausage and Black Bean Stew (we just call it Black bean soup at my house) – freezer meal style
(adapted from Fix it and Forget it Lightly cookbook)
1 med onion chopped
1 bell pepper chopped
1 cup celery sliced
3 15oz cans black beans, drained (no salt added)
1 14oz can chicken broth (low sodium)
2 4 oz cans green chilies chopped
3 cloves garlic minced
1 tsp cumin
¼ tsp ground chipotle chili (or other chili powder) (if you like it spicier you can double it- that is what I did in the bag I kept)
3/4 tsp ground coriander
1 ½ ysp dried oregano (Mexican style best but any will do)
1 lb turkey sausage thinly sliced (the smoked sausage kind tastes best)
Salt to taste
Add all ingredients except sausage to crockpot (or put in freezer bag and freeze- put in crock pot when ready to cook- freeze sausage in a separate bag) and cook on low for 5-7 hours. Remove 1 ½ cups of mixture and puree in a blender (or use an immersion blender right in crock pot and do about 1/3) and return to crockpot. Add the sliced sausage 30 min before serving. We like to top with lime juice, Mexican cheese (such as cojita ) and sour cream. (if I am being super healthy I go really light on the cheese and no sour cream).
Chipolte Lime Chicken Crock Pot
Adapted from several recipes online
Serves 6
2- 3 lbs chicken (breasts or thighs- enough for 6 people)
1 15 oz can black beans (optional)
1 bell pepper sliced
1 c carrots chopped
1 c celery chopped
1 onion diced
1 8oz can tomato sauce
1 15 oz can diced tomatoes mexican style (if you can find the fire roasted ones those are yummy)
3/8 c lime juice (about 2 limes depending on size)
1 ½ TBS minced chipotle chiles in adobo sauce
3 cloves garlic
Season chicken with salt and pepper. Combine all ingredients. Cook in slow cooker on low 6-8 hours. Serve with rice or tortillas. Top with avocado and cilantro
Not my idea but my friend Vicki took some chicken breasts, pounded them flat, dipped in egg then panko bread crumbs and froze them. I'm guessing she put them on a cookie sheet because they are very flat then put in a freezer Baggie. She gave these ideas for serving: bake at 450 for 12-15 min(no need to thaw) flip once while cooking. Or cook in a skillet- heat 2 tablespoons of oil at med-high heat, cook chicken in batches until golden brown about 2 min per side. Here's a simple sauce she recommended: Stir in 1/2 cup half &half, 1/2 cup goat cheese, 1/4 cup chopped parsley and 1/4 tsp each salt & pepper. Serve over chicken. I'm thinking you could substitute Parmesan for goat cheese and add a little garlic for an Alfredo style sauce.

Ingredients
1/3 cup (3 oz) cream cheese (low fat is fine, avoid fat free)
1/4 cup green salsa
1 tablespoon fresh lime juice
1/2 teaspoon cumin
1 teaspoon chili powder
1/2 teaspoon onion powder
1/4 teaspoon granulated garlic, or garlic powder
3 Tablespoon chopped cilantro
2 Tablespoon sliced green onions
2 C shredded cooked chicken (for extra yumminess, use grilled taco chicken!)
1 C grated pepperjack or plain jack cheese
small flour or corn tortillas
kosher salt
cooking spray or olive oil
1/4 cup green salsa
1 tablespoon fresh lime juice
1/2 teaspoon cumin
1 teaspoon chili powder
1/2 teaspoon onion powder
1/4 teaspoon granulated garlic, or garlic powder

2 Tablespoon sliced green onions

Heat oven to 425. Line a baking sheet with foil and lightly coat with cooking spray.Heat cream cheese in the microwave for about 20-30 seconds so it’s soft and easy to stir. Add green salsa, lime juice, cumin, chili powder, onion powder and granulated garlic. Stir to combine and then add cilantro and green onions. Add chicken and cheese and combine well. You can prepare up to this step ahead of time. Just keep the mixture in the fridge.
If using corn tortillas, work with a few tortillas at a time and heat in the microwave, wrapped in damp paper towels until they are soft enough to roll without cracking. Usually 20-30 seconds will do it. If using flour tortillas straight from the fridge, it helps to warm them in the microwave so they’re easier to roll.
Place 2-3 T of chicken mixture on the lower third of a tortilla, keeping it about 1 inch from the edges. Roll up tortillas and place seam down on a baking sheet, not touching one another. Spray lightly with cooking spray, or lightly brush with olive oil and sprinkle lightly with kosher salt. Place pan in oven and bake for 15-20 minutes or until crisp and the ends start to get golden brown. Remove from oven and let cool slightly before serving. Dip in sour cream, or our favorite: Creamy Lime-Cilantro Ranch.
Freezer Instructions: Prepare the taquitos through rolling them out and placing them on the baking sheet. Place the baking sheet in the freezer and freeze until solid, then transfer to a large freezer bag. When ready to cook, preheat oven to 425 and place the taquitos on a lined baking sheet. Bake for 20-25 minutes or until golden brown and crispy.
Yields 12-16, when using 6″ tortillas, depending on how full you make them.

Spotlight: Juliana Ballard
Meet Juliana Ballard!
Juliana and her cute family moved into their home on Foal Lane in April. They moved from Roy. Juliana grew up in Riverton, UT and met her husband when they worked together for DirecTV. They have been married for 11 1/2 years and have two children and a dog. Kade is 5 and just started kindergarten and Kara is 3. The Ballards also have a 7 year old dog.
Juliana works for H&R Block. SHe is a project manager for a software development team in Kaysville, UT, Kansas City, MO, and Columbus, OH. Juliana loves CrossFit. She coaches at Fuel CrossFit and also coaches CrossFit Kids at the same gym. Her other hobbies include reading and baking.
Juliana loves peanut butter bars, or anything with chocolate and peanut butter or chocolate and caramel. Her favorite vacation spot is Hawaii.

Spotlight
Meet Natalie Aguilar
I grew up in Albuquerque, New Mexico and graduated from Eldorado HS in 2001. I met my husband as a senior in HS through one of our friends. We dated for 3 years and were married on July 4th of 2003. We have been married for almost 11 years! My husband currently serves in the Air Force so I have been a military wife for 10 years. We have lived in NM, FL, AK, ID, and now UT. I love that we have had the opportunity to live in different places and meet new people and see so many new things! We have 4 children - Eric 6, Evan 4, Elise 2 and Emily 4 months. I have a love for crafting and sewing! When my first daughter was small I started a small business - Lil Beauty Boutique on Facebook and Etsy where I sell girls headbands :) That's pretty much me!!
Natalie is a darling lady, and a humble one at that. I am sure she has had some interesting experiences and will have some stories to share with those who get to know her. Her husband is deployed and has a year left in his deployment. Natalie is currently holding down the home front and juggling her young family on her own and I am sure she would love and appreciate friendships and all the helping hands she can get. It has been a pleasure getting to know her.

Spotlight
Meet Jana Fowers
I was born in Rio de Janeiro, Brazil, and spent my growing up years in Mexico City, because my father was a U.S. Diplomat.
Attended a private American School where most of the children had fathers who were CEO's of U.S. companies, like Ford, Coca-Cola,
etc. We were accepted at first, but as we got into high school, our LDS upbringing made us so different, that it was hard to have
friends. I spent my senior year attending a small high school in the mountains of Arizona, where I cared for my grandmother, younger
sister, and help teach seminary to the Apache Indians.
It was a welcome relief to go off to BYU and only be responsible for myself. Graduated from BYU, taught school, went back for a Master's,
went on a mission and met Elder Fowers at the train station in Geneva, Switzerland. Not love at first sight. Instead I stamped my foot
at him and called him a "dumb Elder". (Ended up with a brain concussion later when my motor bike was sideswiped, and I must have forgotten
that first encounter.)
We were married about eight months after I returned from my mission, and moved to Logan where Sam had one more year at USU. I taught
school at Providence Elementary, finishing the year on a Friday. Sam graduated on Saturday, and our first child was born on Sunday. (Incredible
timing!)
The following week we moved to Washington D.C.
We have now lived in Davis County about 30 years. We have nine children, all graduates of Davis High and twenty grandchildren. All wonderful,
smart, and we love them to pieces!!
Sam and I enjoy guiding Church History tours which we have done for a dozen years. I have had a private pre-school in my home while my children
were young. Then moved on to making quilts, decorating houses. A side hobby has been designing and building homes. Have taught Spanish
for several years in the school district, and the latest stint of teaching was nine years at the County Jail. Finally got the "get out of Jail" card and
am happy to have more free time to talk about essential oils and play with the grands.
I love to travel, love to be with family and friends, and love the Gospel and my Savior with all my heart. Am so grateful for all the wonderful
opportunities I've had over the years and happy to be here with the good people of this neighborhood!!
Jana is an incredible lady with so many life experiences,
she has done it all and is still going strong. Please don't
hesitate to get to know Jana, and let her know what an incredible
lady she is.
